The Volvo standard transmission seems to have the highest max speed owing to it's 12th gear ratio and final drive ratio. You could replace the standard MAN transmission, for example, with the Volvo transmission in a Mod. Copy the Volvo trans file, put in a new name for the trans, rename the file for the Man and put the file in a proper MAN folder.

I've been driving most of the trucks with a 12 speed gear box and I'm not sure whether I double clutch them or not. I do and I don't, depending how I feel at the moment.
